‘Xisha Mooncake’ sells well

As the Mid-Autumn Festival approached, “Xisha Mooncake” of Dengji Pastry in Baojing County, Xiangxi Tujia and Miao Autonomous Prefecture sold well, and attracted many citizens from Chongqing, Guizhou, and Hubei to buy them by car. “The mooncakes here are delicious and not expensive, with 8 mooncakes priced at 26 yuan, and their taste reminds me of my childhood,” said a citizen from Chongqing.


 
Dengji was formerly known as Qiantaiyi, a century-old brand originated in 1908. It has been passed down for four generations to this day. In 1928, Deng Chuanlai, the second generation inheritor of Dengji, founded Dengji Pastry in Baojing County, which specializes in handmade pastries.

The unique handmade craftsmanship is the reason why Dengji Pastry has been passed down to this day. The production of each “Xisha Mooncake” requires 16 processes. The most important one is the stir-frying of the filling. “If the heat is too high, the filling will be burnt. If the heat is too low, it will be undercooked,” said Peng Yunke, who has 16 years of experience in stir-frying the fillings of mooncakes.


 
The aroma of red beans and animal fats blend over the appropriate heat of the firewood during stir-frying. It is ready until the color changes from red to black. There seems like one layer of mooncake skin, but if you take a bite, you will find there is a multi-layered flaky crust.


 
Peng Xiaoyu, the third generation inheritor of Dengji Pastry, said that “Xisha Mooncake” has always been made by hand, and has been awarded the “time-honored brand in Hunan”. Deng Yao, the fourth generation inheritor of Dengji Pastry, said that “Xisha Mooncake” costs 52 yuan per kilogram. In the days approaching the Mid-Autumn Festival, the mooncakes are often in short supply, with an expected annual output value of 1.2 million yuan.
